There are a few different varations of the soup diet.
The following came out in Good Housekeeping in 2001...it is very good!
It has 40 calories per serving.

ALL YOU CAN EAT SOUP DIET

5 medium carrots, cut into 1-inch slices
3 medium celery stalks, sliced
3 large onions, chopped, or 3 medium leeks, each cut into 1-inch slices
1 large garlic clove, minced
1 can (28 oz.) tomatoes in juice
1/2 medium cauliflower, cut into bite-size pieces
12 ounces green beans, each cut into thirds
3 medium zucchini (6 oz. each), cut into 1-inch slices
2 packages (5 oz. each) baby spinach leaves
1/2 cup chopped fresh parsley
2 chicken-flavor bouillon cubes or envelopes
1 teaspoon salt
1/2 teaspoon freshly ground pepper


1. Coat 8-quart saucepot with nonstick cooking spray. Over medium-high heat, add carrots, celery, onions, and garlic. Cook, stirring occasionally, 5 minutes.
2. Stir in tomatoes with their liquid, breaking up tomatoes with side of spoon. Add cauliflower, remaining ingredients, and 12 cups water. Heat to boiling over high heat, stirring occasionally.

3. Reduce heat to low; cover and simmer, stirring occasionally, 15 minutes or until vegetables become tender. Add more salt and pepper if desired.

Then there is the original ALL YOU CAN EAT Cabbage Soup diet...it is also a very good one.

1 head cabbage, shredded or chopped
2 large onions, chopped
16-28 ounces canned tomatoes, chopped
2 green peppers
4 stalks celery
1-2 packages Lipton onion soup mix, or any dry onion soup mix (optional)
black pepper
any fresh herb(s) of your choice, chopped
6 carrots, sliced
1/2 pound green beans, sliced on diagonal
1/2 cup balsamic vinegar (optional)

Put all vegetables in a big pot and cover with water. Bring to a boil, stir in the soup mix (if desired), and boil gently for 10 minutes. Cover, reduce heat, and simmer until all the vegetables are soft. Stir in the black pepper and chopped herbs (saving some for garnish).
Eat as much of the soup as you like, as often as you like. Drink as much water as you like and non-caloric drinks including coffee, tea, and herbal teas.
